Under the cobblestones of Beaune, you descend 37 steps to a network of tunnels carved out of limestone where the temperature is kept at a constant 12°C. Among shelves full of dusty bottles, you will discover how the Kimmeridgian soils and microclimates of the Côte-de-Nuits and the Côte-de-Beaune influence the wines. Then it's time for the tasting: tulip glasses open on an old barrel, crusty bread and local cheese accompany a selection of whites and reds - floral Puligny-Montrachet, unctuous Meursault, spicy Savigny-lès-Beaune... - revealing notes of hazelnut, brioche and undergrowth.

Each sip becomes a master class on vintages, pairings and service: why uncork 30 minutes before, at what temperature to open a premier cru or how to improvise a home cellar without investing too much.
