San Cristóbal de las Casas welcomes you with a route that combines its rich indigenous and colonial heritage with one of the most fascinating gastronomies in Mexico. You'll start at the Plaza del Cerrillo, where your guide will introduce you to the itinerary and give you tips on how to make the most of the experience.
The first stop takes you to the local market, epicentre of ancestral medicine and neighbourhood of aromas: you'll taste "coleta", a dish that mixes healing herbs and native flavours. As you walk around, you'll learn how each ingredient - from chipilín to achiote - has a medicinal and ceremonial use in the region.
Then, flavours that soothe the soul: chipilín soup and other regional broths, served on a terrace overlooking the centre. Here your guide will tell you about the nearby temples and murals, enriching your historical and artistic panorama.
Later, mole coleto and a selection of sauces will show you the diversity of traditional Chiapas cuisine. You'll stroll through streets of urban art, where murals by local and foreign artists tell stories of resistance and celebration.
To celebrate the multicultural character of San Cristóbal, the next stop is international cuisine at a gourmet market, where ingredients brought by migrants are fused with recipes from around the world.
